A little Q & A with the founders of Del Campo Tortilla Co. Q.: Why are you obsessed with corn tortillas? A: I grew up in Mexico City in the 1960's and 70's. We ate corn tortillas 2-3 times a day. Freshly and simply baked from corn, we got them warm out of the oven from the corner ''tortilleria'' (tortilla bakery); making them at home was not practical or common or economical. We bought the soft tortillas by the kilo, they got wrapped in a clean towel and we rushed home to the table to eat with everything! From eggs, cheese, rice, chicken, beef, or fish. Of course always together with guacamole and hot sauce. Tortillas are used for tacos, flautas, quesadillas, cut into triangles for nachos, chilaquiles and basically as a utensil to scoop up any food that is dished out. A meal, in Mexico, is never complete without tortillas. The rich flavor of corn actually brings out the best flavor in any food you put with it, as opposed to a wheat flour tortilla, and, you do not have to be eating Mexican food or spicy food to enjoy them as well. Q.: So, when you moved to New York, and then New Jersey, in the 80's, what did you eat? A: I really missed those corn tortillas from back home! I searched in supermarkets and specialty markets . I tried out quite a few brands of the packaged ones, but none tasted remotely like the corn tortillas I liked so much. For many years I and my family enjoyed Mexican corn tortillas only when friends or family from Mexico City visited us: we asked them to bring them us a suitcase full! We stacked the freezer with them (not a great idea) and ate them on special occasions? And I found that when I shared them with my non-Mexican friends and neighbors, they loved them as well. I was always talking about opening an authentic Mexican, ''tortilleria'' in New Jersey, but life took a different course. I had a successful career in an unrelated field, as my family grew. Q. When did you finally open Del Campo Tortilla Co., an authentic Mexican ''tortilleria'' in New Jersey? A. In 2011, I kind of had a moment to breathe, my wife encouraged me to do it, to get it out of my system. So I decided it was finally time to do it!! I initially operated Del Campo Tortilla Co. as a hobby, I was still running my other businesses, and I can't say I took it very seriously. But when my wife got involved with marketing and distribution, we saw a huge positive response from consumers. We are still a specialty product, and you won't find them in chain supermarkets. Nonetheless we have chosen to focus on producing only a few products very well, in small batches, fresh every day. We don't want to get far away from our original personal touch. Q. What is so special about your tortilla products? A. Quality. Flavor. Passion. Mindfulness. A desire to spread happiness. Our customers want to put the very best food into their bodies. Q. Are your products organic or non- GMO? A. No, our products are not organic and not non- GMO as they would make them very expensive and they would have a very short shelf life. Our products contain a minimum amount of natural additives to prolong stability of their quality. Our ingredients are very high quality and free of many allergens. We produce a very clean product with a very simple 3 -4 ingredient recipe. Q. Are your products gluten free? A. Yes , everything is gluten free, naturally!! Our tortillas are made only from corn, which never has gluten, and we produce in a dedicated gluten- free facility. There is no concern of cross-?contamination from any other productions. Gluten -free is the only thing we make. Q. Where can we buy your products? A. If you are a retail consumer in NY and NJ, you might find them in your favorite local kosher grocery store. You can also buy them directly from our ''tortilleria'' on weekdays when we open to the public . In other parts of the USA you can order on Amazon or email us for direct shipping.
